Four poké sauces you are going to love!

The fish dish from Hawaii known as poké has become a worldwide trend! This trend has also come to Norway, and the dish using raw fish is increasingly popular.

A poké bowl, both healthy and full in nutrients, has become a fashionable addition to menus in both restaurants and as fast food. And what's not to love, when you can make it using any ingredients you like?

If you haven't tasted a poké dish yet, it is mainly made up of raw, chopped fish, spring onions, soy sauce, chilli and sesame oil. In Norway, we normally have poké with salmon and trout, served alongside rice or pearly barley, while it was originally made with tuna or squid.

The recipe couldn't be more simple: you just chop up the ingredients and serve them in a bowl.

Different flavours of poké sauce

With time, the dish has developed. In several major cities around the world, like New York and London, you will find poké restaurants where you can make up your own flavour combinations with ingredients such as mango, edamame beans, different kinds of onion and avocado.

A lot of people have taken this incredibly quick and simple dish one step further – into their own kitchens.

One of the essential ingredients in the dish is the sauce. This is normally based on soy sauce, but the flavours can be transformed with only a few simple changes.

Below are four simple and tasty recipes for poké sauce:

Classic ponzu sauce:

Serves 4

1/2 finely chopped red chilli

4 tbsp soy sauce

4 tsp sesame oil

Juice of 1 lime

Mix and serve. Try with this poké mix with trout, tuna and halibut.

 

Asian poké sauce:

Serves 4

4 tsp sesame oil

4 tbsp soy sauce

10 turns of black pepper

Mix and serve. Great with the recipe for poké bowl with scallops.

 

Spicy poké sauce:

Serves 4

Grated zest of 1 lemon

Juice of 1/2 lemon

1 tsp sugar

1 tsp finely chopped ginger

4 tbsp soy sauce

1 tsp finely chopped chilli

Mix and serve. This tastes wonderful with a poké bowl with halibut.

 

Powerful poké sauce:

Serves 4

2 tbsp soy sauce

1/2 tsp lime juice

5 turns of black pepper

4 tbsp mayonnaise

Mix and serve. Tastes great with a trout poké with white beans.
