Fjord trout is a niche product known for its high quality. It matures in the clear, cold Norwegian fjords where the seawater meets fresh meltwater from the glaciers in the mountains.

Trout is a name used for many different species of salmonids. The specie of trout that Lerøy produces is a rainbow trout that is a very suitable specie for farming. 

Lerøy is Norways largest producer of rainbow trout. FJORD TROUT® is used as a quality brand for rainbow trout of superior quality. Fjord trout is the brand name for trout which is farmed, packed and transported after the conditions for this standard, which was developed together with the Norwegian Seafood Counsil.

Fjord trout have shorter muscle fibers in the fish meat than salmon. This gives the firm texture and makes it most suitable for dishes where is is marinated and heat treated minimally. Fjord trout is sold fresh, frozen, in portions, fillets or as whole gutted fish. It can be smoked, marinated or hot-smoked, sugarsalted and cured.

Aquaculture

Farming of trout takes place along nearly the entire Norwegian coastline, from Finnmark in the north to Vest-Agder in the south. Like Atlantic salmon, the trout starts its life in freshwater. Once it has reached a certain size and has adapted to seawater, it is moved to pens in the fjords. The farms are located in fjords with good water replacement which ensures optimal living conditions for the fish. It stays there until it has reached its market-ready weight of 2–5kg.

Nutritional content

Fjord trout has a natural high content of protein and contains a lot of the healthy polyunsaturated fatty acids. It is especially rich in:

  • Protein, contributes to the growth and maintanence in muscle mass
  • Marine Omega 3-fatty acids, EPA and DHA contribute to the normal function of the heart
  • Vitamin D, contributes to the maintanence of normal bones, and teeth. Contributes to the normal function of the immune system.
  • Iodine which contributes to the normal functions of the nervous system and the maintancence of normal skin.
  • Selenium contributes to the normal thyroid function, maintanence of normal hair and nails, and contrubutes to the protection of cells from oxidative stress.

Sustainability

Norwegian Aquaculture Act regulates some aspects related to how Norwegian fish farming interacts with the environment. The act specifies that aquaculture is to be established, conducted and closed down in an environmentally-responsible manner.

Food safety

The Norwegian seafood industry is subject to stringent requirements in order to ensure that the seafood is safe for consumers. Checks are done throughout the entire food chain to ensure the safety and quality of the fish, with the authorities laying down health and safety regulations that are supervised by the Norwegian Food Safety Authority, the Norwegian National Institute of Nutrition and Seafood Research (NIFES), the Norwegian Directorate of Fisheries and the Norwegian Ministry of Trade, Industry and Fisheries.

A quality standard mark has been developed for Norwegian farmed trout, NS 9412:2010, which is intended to ensure a consistent level of excellence.

How to use fjord trout

Fjord trout is suitable for many kinds of dishes, for example raw sashimi or sushi, ceviché or poké/sushi bowls. It is excellent in soups and caserolles, and can be baked, grilled, marinated, seasoned or used in a wok.
