Salmon taco with mango salsa

    • 500 gram salmon fillets
    • 1 tbsp home-made taco spices
  • Home-made taco spices
    • 2 tbsp cumin
    • 1 tbsp paprika
    • 1 tbsp coriander
    • 1 tsp pepper
    • 1 tsp garlic powder
    • 0.5 tsp salt
  • Mango salsa
    • 1 large mango
    • 2 tomatoes
    • 0.5 cucumber
    • 0.5 red onion
    • 1 pepper
    • 2 tbsp fresh coriander, chopped
    • 0.5 lime
    • 0.25 tsp chilli powder
  • To serve
    • 4 tortillas
    • 1 crispy salad
    • 100 grams feta cheese in cubes
  • Guacamole
    • 2 avocados
    • 1 clove garlic
    • 1 tbsp olive oil
    • 0.25 tsp pepper
    • 0.5 lime, juice of

PROCEDURE

1. Mix all the ingredients for the home-made taco spices.

2. Dice all the vegetables for the mango salsa and mix in a bowl.

3. Crush the avocado with a fork and mix with all the ingredients to make a guacamole. Season with lime juice and spices.

4. Heat the tortillas in the oven.

5. Dice the salmon and fry in the pan with oil and taco spices.

6. Serve the tortillas with salad, mango salsa, guacamole, feta cheese and salmon.
