Fried cod with spring onion and cucumber

    • 560 g cod fillet
    • 1 cucumber, in balls or dice
    • 4 spring onions, sliced
  • Swee soy sauce
    • 2 tbsp unsalted butter
    • 1 tbsp brown sugar
    • Juice of 1 lime
    • 2 tbsp soy sauce
    • 5 turns of a pepper grinder

Procedure

  1. Dice the cucumber (or make cucumber balls with a melon baller) and thinly slice the spring onion.
  2. Melt 2 tbsp unsalted butter in a frying pan and fry the fish over a medium heat for around 4 minutes on each side.
  3. Make the sweet soy sauce by adding 1 tbsp brown sugar to the frying pan and letting it dissolve in the butter. Squeeze the juice of 1 lime into the pan then add 2 tbsp soy sauce and mix. Finally, season the fish with ground pepper.
  4. Dish the cucumber and spring onion out on plates. Top with the fried fish then pour over the sauce from the frying pan.
