    • 280 g cod
    • 6 dl chicken stock
    • 20 shiitake mushrooms, thinly sliced
    • 20 black pepper
    • 1 tsp soy sauce
    • 1 bunch flat-leaf parsley, leaves picked

Method

1. Add the stock and mushrooms to a pan with 20 turns of black pepper and boil for around 10 minutes.
2. Lower the temperature, dice the cod then add to the soup and poach for 4 minutes.
3. Add the soy sauce and flat-leaf parsley directly before serving.

(You can use other types of mushroom if shiitake mushrooms are not available)
