Poké bowl with halibut, avocado and mint

This poké bowl can easily be made in less than 30 minutes. The lemon-based poké sauce gives the dish an extra tasty experience.

    • 400 g fresh halibut fillet, skinned and boned, sliced thinly
    • 2 bags of boil-in-the-bag Jasmine rice
  • Poké sauce
    • Grated zest of 1 lemon
    • Juice of half a lemon
    • 1 tsp sugar
    • 1 tsp fresh ginger, grated
    • 4 tbsp soy sauce
    • 1 tsp chilli, finely chopped
    • 1 avocado, diced
    • 8 tbsp peas, frozen
    • 1 pack of peasprouts
    • 10 mint leaves
    • 2 tbsp sugar kelp or other seaweed

Method

  1. Boil the rice, following the pack instructions and leave to cool.
  2. Mix the ingredients for the sauce in a small bowl.
  3. Dice the avocado then mix with the peas, peasprouts, mint leaves and finely chopped sugar kelp in a bowl. 
  4. Divide the rice between serving bowls, then add the vegetables and halibut and top with the sauce.
